Maria is a talented cook and baker with hundreds of thousands of followers visiting her website and social media for her simple, fresh, and family-friendly recipes. With two cookbooks (the second is all cookies!) under her belt, we were so excited to work with her on the design of these products. We asked Maria a few questions in honor of the launch!
Q: Can you share your story? How did you get started?
I live in Salt Lake City, Utah, with my husband, Josh, and our two boys. I started Two Peas & Their Pod in 2008. Long story short, we made all the food for our wedding reception, and after the wedding, our friends and family wanted the recipes. So, I put them on a blog... and the rest is history! I love sharing recipes that are simple, fresh, family-friendly, and, of course, delicious! I also have an obsession with cookies, so you will find LOTS of cookie recipes!
Q: What is your favorite thing about running twopeasandtheirpod.com?
I love inspiring people to get in the kitchen to make dinner for their family, bake a batch of cookies for fun, or make a meal to share with a neighbor in need. Food brings us all together, and I love helping people create memories through the meals and recipes they share.
Q: What made you want to partner with My Mind’s Eye on these new products?
I am a huge fan of My Mind's Eye. I have been using their products for years. I love entertaining, and their products make entertaining easy and fun!
Q: Why cookie boxes?
I LOVE cookies. I am the ultimate cookie monster! I love creating cookie recipes, baking cookies, eating cookies, and SHARING cookies. I am always taking cookies to friends, family, neighbors, teachers, etc., and need something to put them in. These boxes are SO cute and make the cookies extra special.
Q: You recently wrote your second cookbook, Let's Eat Cookies, which is all about cookies, and your website is filled with recipes. Can you share your top 5 favorite cookies to make for friends and family?
This is a TOUGH question! I have so many favorites! Here are 5 I love and make all the time:
- Brown Butter Salted Caramel Snickerdoodles – brown butter snickerdoodles with a caramel surprise in the center! These cookies are life-changing!
- Peanut Butter Cookies – super soft, chewy, and full of peanut butter flavor. My "go-to" peanut butter cookie!
- Coconut Oatmeal Chocolate Chip Cookies – a family favorite!
- My Go-To Chocolate Chip Cookies – my most requested cookie and the one I make most often. You can't go wrong with a GOOD chocolate chip cookie! The recipe is in my cookbook!
- Pretzel Toffee Chocolate Chip Cookies – a new favorite! I'm a sucker for sweet and salty!
Find MORE cookie recipes on Two Peas and Their Pod and in my cookbook! I have too many favorites!
Q: Any tips on baking the perfect cookie?
- Start with butter that isn’t too warm or greasy—this will make your cookies spread too much in the oven.
- Never pack the measuring cup when measuring flour. I fluff, spoon, and level. If you use too much flour, your cookies will be dry and puffy.
- Don’t overmix the dough. Mix until just combined; it’s okay if there are a few flour streaks left.
- Use light-colored baking sheets lined with parchment paper. Don’t use dark cookie sheets, or the bottom of your cookies will burn.
- Make sure you preheat the oven for 30 minutes before you start baking. Check your oven temperature with an oven thermometer—oven temperatures aren’t always accurate.
- Don’t overbake! Always take cookies out of the oven when they are slightly underbaked in the center. They will finish baking as they cool on the baking sheet.
- Use good quality chocolate, pure vanilla extract, and I like to finish most of my cookies with flaky sea salt.
